I guess they are more sweet in taste than the normal onion, or not.
they are less sweety than onions. That makes its curries more tasty. I think, not sweet at all.
Actually, when we fry onions more, they become a little sweety. Isn't it?
That's why, many old people (grand mothers), till now, never prefer onions for making dishes as they don't like the sweetness of onions.
You just ask your mother to buy some shallots and prepare Chicken curry. You can spot that difference very easily
when the onions are fried they will loose the character in it which will cause us cry.

It's sure...it has more nutritious factors than Onion, more tasty too....
It makes us cry more than onions due to the intensity of that gas (I don't know what's it) present...common to both shallots and onions. Also, more time consuming.
But sure, if added instead of onions, the curry will never have that sweetness

May be, the first time i have heard this word "Shallots". Is it like spring onions?
Somewhat...
It belongs to Onion catagory.......costs also double price.
Yet, if we are able to consume at least half kg every week, it's very healthy. It has many medicinal values too....
It's a best medicine to wound, reduce bp, healthy heart etc....
To remove wounded nails also, it's used. Just crush it and tie it on the finger tightly with a piece of cotton.
It can be added while making chutney too....tastes best than normal onions.
Only problem is time consumption.
It's used for all types of 'Theeyal' curries where grated coconut is fried, grind and added to both veg and non-veg curries. It tastes better.
While frying coconut also, adding chopped shallots and curry leaves give a nice odour.
In Gujarat, i haven't seen shallots in vegetable market.
Also, i hate onions :P its smell and never in my life consumed raw onions.

We add curd to chopped onions or shallots. Add some salt, carrot and a chopped green chilli also. We can add tomatoes too....It tastes best with rice. If we have a red chutney also(not curry type), what to say more...amazing combination.
