one way which can replace tomato to some extent is to use some curd or dahi while cooking the vegetable. It will become tasty.

one way which can replace tomato to some extent is to use some curd or dahi while cooking the vegetable. It will become tasty.
Such substitutes are always there and Indian women are quite ingenious at using them in daily cooking. But nothing beats the natural goodness of fresh vegetables. And another aspect is that, in spite of large scale production there are simply no proper systems being developed to either store them in cold storage or process them for latter consumption. Again a result of poor planning and lack of foresight as far as agriculture is concerned.
