I lived on Dosa and idlee for many years during my management and service period in south. I like Idlee, vada and Dosa.

Till now, I haven't learn the technique of Urud Vada and Onion Vada :( :( :(

My wife knows how to make Urad vada in Marathi style. She can make onion Vada too.

Let me tell you a traditional recipe of chutney. But you should make it by traditional method...never use mixer...to get its real taste.
Red chillies - 2-3
Scrapped Coconut...
Shallots - 3 or 4
Ginger - A small piece
Cumin seeds - A tea spoon (You can exclude it to make another chutney)
Salt
Grind it together using old traditional method. Mixer can also be used.
You can finely grind it or just crash it. Both gives special taste. Never add water if you are just crushing it.
Make it a round ball.
If you are serving with rice, you can add a little tamarind also. Curd, rice and this chutney is an amazing combination. If you are using it with idli or dosa, you can avoid tamarind
Never add oil or mustard to it.
You can make it a bit change with crushing or finely grinding 3-4 curry leaves too.
Sure, you will really love this Grandma Chutney.
