1. Peas Briyani
Ingredients:
- Basmatic rice - 1 cup
- Green peas - 1/2 cup
- Onion - 2
- Carrot - 1
- Cauliflower (small) - 1
- Cocunut milk - 1 1/2 cups
- Ghee - 1 tsp
- Brinji leaves - little
- Oil - As per need
- Cinnamon - 1
- Aniseed ( sombu in tamil ) - little
- Salt - As per taste
To grind:
- Onion - 1
- Garlic - 10 teeths
- Green chillies - 5 to 6
- Ginger - little
- Grated coconut - 1/4 cup
Method:
1. Chop onion and carrot to fine pieces.
2. Soak cauliflower in hot water for 10 minutes and remove the florets and cut to fine pieces.
3. Cook cauliflower and green peas seperately.
4. Wash the rice 2 to 3 times and soak it for 15 minutes.
5. Heat oil in a pressure cooker and fry cinnamon, brinji leaves and aniseed.
6. Then add onion and fry till the colour changes to slight brown.
7. Add green peas , cauliflower and carrot and fry for sometime.
8. Grind all the ingredients listed in the topic "To grind" in a mixie.
9. Add the grinded paste and fry for sometime.
10. Add cocunut milk, water and salt.
11. While it is boiling add rice and mix it well.
12. Pressure cook the rice ( 2 whistels ) and serve it with onion raitha or pappad.
2.Peas Bread roll
Ingredients:
- Bread slices - 10
- Green peas - 1 1/2 cup
- Onion - 2
- Ginger garlic paste - 1 tsp
- Chilli powder - 1 tsp
- Grated cocunut - 1/2 cup
- Lemon juice - 1 tsp
- Salt - As per taste
- Oil - As per need
Method:
1. Chop the onion to fine pieces.
2. Heat oil in a pan and fry onion till colour changes to slight brown
3.Then add green peas and fry till it is half cooked.
4. Add cocunut, ginger garlic paste, chilli powder and salt and mix it well.
5. Finally add lemon juice and fry it till all vegetables are cooked. Then remove it from the flame.
6. Heat oil in a pan for frying bread rolls.
6. Cut the corner ( brown colour ) of the bread slices.
7. Soak the bread slice in water and drain the water immediately.
8. Put the stuffed vegetables in the centre of the bread and roll it.
9. Fry this rolls in oil till it becomes slight brown and serve it hot.
3.Peas Roti
Ingredients:
- Green peas - 1 cup
- Onion - 2
- Tomatoes - 2
- Red chillies - 3 to 4
- Grated coconut - 1/4 cup
- Maida flour - 1/2 cup
- Salt - As per taste
- Oil - 2 tsp
Method:
1. Chop the onion and tomatoes to fine pieces.
2. Heat oil in a pan and fry green peas and allow it cool.
3. Grind together tomatoes, cocunut, red chillies, peas and onion to a paste. Don't grind it very nicely.
4. Take maida flour in a broad vessel, add water, oil and salt and make a dough.
5. Keep this aside for 30 minutes.
6. Make small balls of the dough.
7. Take a ball and make it like a cup with your hands and fill the center with the grinded paste.
8. Close it and roll the chappatis and fry it in a dosa pan.
9. Serve it hot with onion chutney or this can be eaten as such.
4.Peas Vada
Ingredients:
- Dried peas ( Available in grocery shops ) - 250g
- Onion - 2
- Red chillies - 3
- Cumin seeds - 1/2 tsp
- Toor dhal - 100g
- Salt - As per taste
- Oil - As per need
- Curry leaves
Method:
1. Soak dried peas for 4 hours and toor dhal for 1 hour in seperate vessels.
2. Soak cumin seeds for 10 minutes.
3. Chop onion to fine pieces.
3. Grind together peas, red chillies, cumin seeds and toor dhal to a paste by adding little water. Don't grind it very nicely.It should be like rava sooji.
4. Add chopped onions and salt to the paste and mix it well.
5. Make flat balls from the paste and deep fry it in oil till it becomes golden brown.
5.Peas Pickle
Ingredients:
- Green Peas - 1/2 cup
- Fenugreek seeds - 1/4 tsp
- Mustard seeds - 1/2 tsp
- Lemon juice - 2 tsp
- Chilli powder - As per taste
- Salt - As per taste
- Oil - 1 tsp
Method:
1. Soak peas for 1 hour.
2. Cook the peas in pressure cooker. Wait for 1 whistle.
3. Drain the water and allow it to cool.
4. Heat oil in a pan ,add peas, chilli powder, salt and lemon juice and boil it and allow it to cool.
5. Fry mustard seeds and fenugreek seeds in an empty pan and grind it to a fine powder.
6. Add the powder to the pickle and mix it well.
Note : This can be kept for 3 days.
6.Peas Soup
Ingredients:
- Green peas - 20g
- Small onion - 10
- Garlic - 2 teeths
- Pepper - 1/2 tsp
- Milk - 1/2 glass
- Ghee - 1/4 tsp
- Corn flour - 1 tsp
- Salt - As per taste
Method:
1. Soak peas for 1 hour.
2. Cook the peas in pressure cooker. Wait for 1 whistle.
3. Drain the water and allow it to cool.
4. Heat ghee in a pan and fry onion and garlic and allow it to cool.
5. Grind onion and garlic to a fine paste.
7. Take milk in a vessel and add salt, pepper powder, peas and grinded paste.
8. After it is well boiled, before removing it from flame add corn flour and mix it well so that soup is thick.
