Tomato pickle
Ingredients:
Tomato - 2 kg
Gingelly oil - As needed
Sugar - 1/4 kg
Salt - As needed
Ginger finely chopped - 125 gm
Garlic finely chopped - 125 gm
Red chillies powder - 125 gm
Mustard - 125 gm
Fenugreek - 1 table spoon
Cumin seeds - 2 tsp
Vinegar - 1 bottle
Method of preparation:
Fry fenugreek, mustard and cumin seeds together without oil and make a powder using mixer. Add chilli powder and vinegar to it and mix it well.
Heat oil and fry ginger and garlic till it become light brown.
Add vinegar mixture to it and boil it.
Add tomatoes, sugar and salt. Mix the contents well and put the flame off.
Tomato serbath
Ingredients:
Tomato sauce - 1/2 cup
Orange juice - 1 cup
Lemon juice - 2 table spoon
Sugar - 1/2 cup
Water - 6 cups
White pepper powder - 1/2 tsp
Salt - As needed
Coriander leaves finely chopped - 1 table spoon
Method of preparation:
Mix all the contents together and filter it.
Pour it in serving glasses by adding 1-2 ice cubes. You can also refrigerate it before serving.
Tomato-Egg soup
Ingredients:
Tomato cut into small pieces - 4
Chicken stock or vegetable stock - 3 cups
Onion cut into very small pieces - 1
Salt and pepper - As needed
Egg - 1
Coriander leaves, spring onion and celery finely chopped - A little
Method of preparation:
Cook tomato and onion using stock.
Whip an egg and add it to the tomato mixture through an extractor. Stir continuously. Put the flame off.
Add coriander leaves, spring onion and celery to it and mix it well. Add salt and pepper too.
Serve it hot along with tomato sauce and soya sauce, a table spoon each.
Tomato sauce
Ingredients:
Well ripened tomato - 3 kg
Sugar - 1 cup
Vinegar - 1.25 cups
Ginger finely chopped - 1 table spoon
Garlic finely chopped - 2 table spoon
Red chillies' skin (seeds excluded) - 8
Cinnamon - 4 pieces 1 inch each
Salt - 1 table spoon
Method of preparation:
Add a little vinegar to ginger, garlic and red chillies and place it for some time. Then grind it to a fine paste.
Cook tomato, cinnamon and salt together without closing with a lid. Cook it till tomato softens and its skin begins to separate.
Mix sugar, ginger-garlic-chillies paste and vinegar together.
Filter the tomato mixture and heat it along with this vinegar mixture in low flame till the sauce thickens.
We get 1 litre tomato sauce with this amount of ingredients.
Tomato-Paneer stuffed
Ingredients:
Tomato - 6
Paneer - 200gm
Onion - 2
Green chillies - 2
Ginger - 1 tsp
Coriander - 4 table spoon
Turmeric powder - 1/4 tsp
Salt - As needed
Cooking oil - A table spoon
Cumin seeds - 1/4 tsp
Method of preparation:
Cut each tomato into two halves and separate its seeds. Then marinate it with a little salt water and keep it upside down for 1 hour.
Finely chop onion, green chillies, ginger and coriander leaves. Cut paneer pieces to small pieces.
Heat oil in a pan and add cumin seeds. When it splutters add this mixture along with a little salt and turmeric powder. Saute it for a few minutes.
Stuff each tomato pieces with this mixture and bake it in oven for 10 minutes.
Serve hot.
