Some Recipes With Bendi
Here are a collection of all the regular varieties of recipes that can be made with Bendi, the ladies finger.
TOMATO BENDI CURRY
Ingredients:
1. Bendi (Ladies fingers) - 250 Grams
2. Tomato finely chopped - 1 cup.
3. Onions finely chopped - 1 cup.
4. Salt to taste, Red chilly powder.
5. Turmeric powder – a pinch.
6. Water to cook.
7. Chopped coriander – 1 cup.
8. Oil.
Procedure:
1. Take bendi and cut them with the length of two inches each. Cut bendi in the cross style, which looks good in presentation.
2. Take a pan and add 2 table spoons of oil.
3. Now add onions and let them fry in the medium flame.
4. When the onions half cook, add chopped tomato.
5. Now add turmeric powder and so cook for salt.
6. Let this cook for 5 minutes in the medium flame with the lid on.
7. Now add bendi pieces, mix well and let them cook for sometime.
8. Now add red chilly powder and fry this for 2 minutes and add water to mix all the ingredients well.
9. After the water boils well, add coriander leaves and then serve.
Nutritional Value:
Bendi is rich in low in Saturated Fat, Cholesterol and Sodium. It is high in Dietary Fiber, and many of the required Vitamins. Bendi is very helpful to maintain optimum health. It also helps in weight loss.

BENDI PAKODA FRY
Ingredients:
1. Chopped bendi (Lady Fingers) – 250 Gms.
2. Besan powder – 4 Table Spoons.
3. Finely chopped onions – Half cup.
4. Long chopped onions – Half cup.
5. Jeera and Dhaniya powder – Half Table spoon each.
6. Red chilly powder 1 and half table spoon.
7. Turmeric powder – a pinch.
8. Jeera – half tea spoon.
9. Ground nuts – 2 spoons.
10. Salt to taste.
11. Oil to fry and make curry.
12. Chopped coriander leaves - 2 Table spoons.
13. Cooking Soda – a pinch.
Procedure:
Preparation of Pakoda:
1. Take a frying pan and add oil to this.
2. Now take a bowl and add besan powder and long chopped onions to this.
3. Add half spoon red chilly powder, salt to taste, jeera powder and dhaniya powder to it.
4. Now add water to make a tight mixture with this.
5. When oil is ready to fry, add cooking soda to the mixture prepared and make pakodas with this and fry.
6. Keep pakodas aside.
Curry Preparation:
1. Take a pan and add 2 table spoons oil to this.
2. Add ground nuts and jeera to this.
3. After they fry well, add onions and bendi pieces and turmeric powder to this.
4. Fry them gently with strirring in the middle, till the bendi pieces fry well.
5. Now add salt, red chilly powder and fry this well.
6. Now add pakodas to this and again fry this whole mixture for about 2 minutes.
7. Add coriander leaves and serve.

BENDI COCONUT FRY
Ingredients:
1. Bendi – 250 Gms.
2. Grated Coconut - Half a cup.
3. Jeera – One Tea Spoon.
4. Ground nuts or cashew nuts – 4 Table spoons.
5. Finely chopped onions – 4 Table spoons.
6. Oil as required.
7. Red Chilly powder – 1 and half tea spoon.
8. Finely Chopped Coriander leaves – 2 Table Spoons.
9. Turmeric powder – a pinch.
10. Salt to taste.
Procedure:
1. Take a pan and add oil required for deep fry.
2. Now add finely hopped bendi pieces to this.
3. After they fry and turn to golden brown, remove them and keep aside.
4. Now take another pan and add jeera and ground nuts / cashew nuts to this.
5. After they fry, add onions and salt to this.
6. When onions get cooked, add fried bendi, turmeric powder and red chilly powder to this and fry for sometime.
7. Mix all the ingredients well and then add grated coconut and fry again.
8. Now add coriander leaves and serve.
Nutritional Value:
As the whole process requires large amount of oil, it is advised to prepare this dish occasionally. Even though bendi is rich in dietary fiber and saturated fat, this dish requires bendi to be deep fried. Coconut is also advised to take in small portions.
Finally, this recipe can be chosen as a occasionally prepared dish when we host guests.
BENDI SAMBAR:
Ingredients:
1. Bendi – Four to five pieces.
2. Tomato – 2 in quantity.
3. Toor Dal - 4 Table Spoons.
4. Jeera, menthi seeds, dhaniya, mustard seeds, urad dal, Bengal gram, curry leaves – Half tea spoon each.
5. Ghee – 2 Table Spoons.
6. Tamarind paste – 3 Table Spoons.
7. Red chilly powder – 1 Table spoon.
8. Salt to taste.
9. Water – if required.
10. Finely chopped Coriander leaves – 2 Table Spoons.
11. Oil – 2 Table Spoons.
Procedure:
1. Boil and cook toor dal to make a fine paste and keep aside.
2. Cut bendi into long pieces and keep aside.
3. Take a bowl and add oil with ghee.
4. Now add Jeera, menthi seeds, dhaniya, mustard seeds, urad dal, Bengal gram, curry leaves and dry chillies.
5. After they fry, add bendi and tomato pieces; and cook for some time.
6. Add red chilly powder, salt and tamarind paste to this and cook.
7. Now add boiled toor dal to this and water if required.
8. Now let this boil for sometime and make a point that the whole dish is stirred well in the mean while.
9. Now add coriander leaves and serve.
Nutritional Value:
This dish can be prepared at any time. This does not require any of the difficult procedures. It is very healthy and easily digestible dish. As bendi is rich is dietary fiber and arhar dal is good in protein, this can be treated as a best food for daily use.
