Something new is always interesting
All the ladies and house wives at home would have heard their children yell at them saying that the same breakfast is served for the entire. “Always idli , dosa , upma. You do not have any other breakfast to prepare”, will be the words that children used to tell at home. Even the men of the family will get annoyed by the usual breakfast. House wives will be breaking their head to think of something new.
This kind of situation will arise in most of the homes. Some men will skip their breakfast also meals and will try to eat at hotels or canteens. This will bring a misunderstanding in the family. In the case of children, most of them are trying to be very adamant and skip their breakfast. Thus they turn very feeble and will not be able to concentrate in their studies. They will fail to produce better performance in their life also. Thus, house wives must make their dining to be very interesting to make their family healthy and happy.
The traditional breakfast is said be with plenty of health benefits. Thus we must find a method to retain the traditional breakfast recipes and try to think of new techniques to make the recipes to be interesting. In the last article of mine I made a collection of recipes which are interesting and healthy with banana as an extra ingredient.
Just consider a situation where bread had to be served as breakfast every day. Then the lady can think of serving bread omelet on the first day, the next day it can be bread with jam, the third day it can be bread sandwich, the next day it can be bread with butter or cheese. When every new day starts with a new recipe the children will be eager to have their breakfast. They will also feel refreshed and energized.
Thus this article will be a collection of different chutneys that can be prepared everyday easily and can used with idli, dosa, upma and chapathis. Thus the traditional recipes will become interesting.
Beetroot chutney
- Take one beetroot (medium size). Wash it clean, peel the skin off and cut into small pieces.
- Take some small onions, tamarind (a small round), garlic (five pieces) and coconut (grated in a small bowl). Add all these in a frying pan and just fry it for ten minutes.
- Then in a heated pan add one table spoon of channa dal, two spoons of urad dal, one table spoon of coriander seeds and then four red chilies. If you do not want the chutney to be too spicy then reduce the number of chillies.
- After heating it for five min, grind it well. Then add the beetroot mixture and grind it well and make it to a paste.
- Then heat some oil in a pan then add mustard, curry leaves. Then add the mixture to the pan. Add salt to taste as required and server it hot.
Ginger chutney
- The ingredients are same as beetroot chutney. But coconut must not be added in this chutney. And red chillies also must not be added since ginger itself will add to the spiciness of the chutney.
- First heat some oil in the pan and add two table spoons of urad dal, one table spoon of channa dal, one table spoon of cumin seeds. Just fry it till it gets to golden brown.
- Then add ginger pieces that was washed and cut into small pieces. Then add some tamarind. Roast it for some time. Add salt to taste.
- Then grind it to a thick paste and no seasoning is required for this chutney.
- This chutney might be spicy. Try to be careful when giving it to children. But it will be very good for health.
Peanut chutney
- Peanuts will surely be present in the favorites list of children. They are rich in protein and dietary fiber. When we can produce an interesting recipe with the favorite peanuts then it will make the beakfast very tasty.
- Heat some oil in and roast the peanuts for five minutes.
- Then grind the roasted peanuts to some extent. Then add water as much necessary for the consistency of the chutney.
- Then heat oil in a pan and then add mustard, cumin seeds and curry leaves. Then add the ground mixture to the pan.
- Tasty and healthy peanut chutney is ready to serve. Coconut chutney is a traditional recipe which has the same procedure. These both chutneys can be prepared alternatively.
Tomato chutney
- Heat some water in a vessel. Put two tomatoes medium sized in the hot water. You will find that the skin of the tomato peels off. Leave for two minutes. Then put grind it to a paste.
- Then heat some oil in a pan, add mustard and curry leaves. Add the tomato mixture and some salt to taste. Then leave to get cooked. When you get an aromatic smell and when the mixture starts to boil then switch off and serve it hot.
Mint chutney
- Grate the mint leaves into pieces and wash it thoroughly.
- Then heat some oil in a pan and then add mustard, four table spoons of urad dal , some small onions and leave it for some time.
- Then add the mint leaves and fry it for some time. Then add tamarind and switch of the stove. Then transfer all of it mixer grinder and grind it to a thick paste. Then add very little water.
- Then again heat oil, add the ground mixture and mix it well. Then add salt enough to taste.
- Then serve it. Though it is thick it will have a great consistency.
All the above recipes will be known to all. But here I am giving it as a compilation so that all of them can learn the procedure and make cooking easy and interesting. Since all the recipes will be prepared with tamarind as an essential recipe It can be used for two to three days also.
