Ingredients:

  • Butter milk ( thick ) - 1 cup
  • Chou chou / Chayote squash ( Bangalore brinjal ) - 2
  • Cumin seeds - 1 1/2 tsp
  • Grated cocount - 1/4 cup
  • Coriander seeds - 1 tsp
  • Green chillies - 1 or 2
  • Mustard seeds - 1 tsp
  • Urad dhal ( Broken ) - 1 tsp
  • Curry leaves
  • Oil - 2 tsp
  • Curry leaves
  • Water
  • Salt - As per taste

Method:

1. Cut the chou chou to small pices. Remove the white seed from the vegetable.

2. Cook the chou chou in pressure cooker. Wait for 3 whistels. ( You can also keep this in another vessel along with rice )

3. Make 1 cup of thick butter milk from curd.

4. Grind together cocunut, coriander seeds,  cumin seeds, green chillies to a fine paste by adding little water.

5. Heat oil in a pan and fry mustard seeds.

6. When it sputters out, add urad dhal and fry till it becomes golden brown.

7. Add chou chou, butter milk, salt and grinded paste.

8. Cook till slight foam comes out.Do not over cook as it will become watery.

9. Garnish with curry leaves and serve.


Note 1: If the kootu is not thick, take rice flour and add little water to make it to a thick paste. Add this paste to the kootu and heat it for sometime. It will become thick.

Note 2: Instead of chou chou you can also use Stem of spinach, Plantain stem, Cabbage and make kootu in the same way.
