Thoran is a typical south Indian side dish where scraped coconut is added to it. It can be made in different combinations and here, I am giving you easy recipe of egg thoran, prepared in 4 different ways. It serves best with boiled rice.
Simple egg thoran
Ingredients:
Egg - 2
Coconut oil - 1 or 2 tsp
Curry leaves - A little
Scrapped coconut - 1/2 cup
Turmeric powder - 1/4 tsp
Chilli powder - 1/4 tsp
Cumin seeds (optional) - 1/4 tsp
Red chilli cut into 2-3 pieces (optional) - 1
Shallots finely chopped (optional) - 1 or 2
Salt - As per taste
Method of preparation:
Break the eggs into a small bowl and add a little salt. Mix the contents well.
Heat oil in a pan and saute red chilli, shallots till it turns light brown. Add curry leaves.
Add eggs, turmeric powder and chilli powder to it and keep stirring. Fry it till it turns light brown.
Add cumin seeds and coconut and a little salt. Stir continuously for 3-4 minutes.
Your simple egg thoran is ready to serve. You can avoid shallots, cumin seeds, red chillies and turmeric powder as whole and with a little variation of the combination of these ingredients. Each combination gives a different taste.
Egg thoran with drumstick added
Ingredients: Boiled egg cut into 2 or 4 parts - 2 Method of preparation: Cook drumstick by adding water and salt. Water content should be fully absorbed.
Egg thoran with carrot and tomato Ingredients: Egg - 3 Method of preparation: Mix 3 eggs well and add required salt and keep aside.
Drumstick split and cut into 1 inch pieces - 2
Green chillies - 4
Turmeric powder - 1/4 tsp
Cumin seeds - 1/4 tsp
Garlic - 4 or 5 cloves
Coconut scrapped - 1/2 cup
Salt - As needed
Mustard seeds - 1/4 tsp
Curry leaves - A hand full
Coconut oil - 2 tsp
Take green chillies, coconut, a little salt, 2-3 curry leaves, cumin seeds and garlic in a mixer and blend it just once.
Heat oil in a pan and add mustard seeds and curry leaves. When it splutters add this mixture along with cooked drumstick.
Stir continuously for 2 minutes and add a little coconut oil to it.
Add boiled eggs to it. Stir once and put the flame off.
Coconut oil - 1 or 2 tsp

Tomato finely cut into pieces - 1
Ginger finely chopped - 1 small piece
Carrot scrapped - 1/4 cup
Scrapped coconut - 3/4 cup
Turmeric powder - 1/4 tsp
Green chillies finely chopped - 2
Red Chillies - 3
Shallots - 5 or 6
Salt - As per taste
Mustard seeds - 1/4 tsp
Onion finely chopped - 1
Take coconut, a little salt, 2-3 curry leaves, red chillies and shallots in a mixer and blend it just once.
Heat oil in a pan and add mustard seeds. When it splutters, add a little curry leaves, onion, ginger and green chillies.
When half cooked, add tomatoes and carrot and keep stirring for 3-4 minutes.
Add coconut mixture and blend it well.
After 1-2 minutes add eggs to it and mix the contents well. Keep stirring till it is well cooked. Put the flame off.
Egg thoran with chicken masala
Ingredients:
Egg - 2
Ginger-garlic paste - 1/4 tsp
Coconut oil - 1 or 2 tsp
Curry leaves - A little
Green chilli finely chopped - 1
Turmeric powder - 1/4 tsp
Chilli powder - 1/4 tsp
Red chilli cut into 2-3 pieces - 1
Chicken masala powder - 1/4 - 1/2 tsp
Coriander powder (optional) - 1/4 tsp
Onion finely chopped - 1
Scrapped coconut - 1/2 cup
Salt - As needed
Mustard seeds - 1/4 tsp
Method of preparation:
Heat oil in a pan and add mustard seeds. When it splutters add onion, curry leaves, green chilli, ginger-garlic paste, turmeric powder and a little salt. Cook it till it becomes tender.
Take coconut, a little salt, 2-3 curry leaves, chilli powder, coriander powder and chicken masala powder in a mixer and blend it just once.
Add eggs to the pan and stir continuously for 30 seconds.
Add the coconut mixture to it and keep stirring for 2-3 minutes. Put the flame off.
Your special thoran will be ready to serve.
