In this article I am giving recipe of some of the traditional dishes of Kerala. They are ada, unniyappam and sukhiyan and can be used as snacks with tea.
Unniyappam
Ingredients:
Rice powder finely grinded - 1/2 kg
Jaggery - 1/4 kg
Water - 1/2 cup
Coconut - 1/4 cup
Sesame seeds - 50 gm
Cardamom powder - 1tsp
Small banana (Palayamkodan) - 2
Oil or ghee - For frying
Method of preparation:
Heat jaggery and melt it and keep it aside.
Crush the banana into it and add rice powder. Mix the contents well.
Cut coconut into thin 1 inch pieces and fry in ghee or oil and add to the batter.
Add cardamom powder and sesame seeds to it, mix well and keep it aside for 20 minutes.
Heat unniyappam maker and add oil or ghee to its holes.
When it boils take a small spoon and pour the batter to each of them filling each holes 3/4 th.
When one side becomes brown, turn the other side with the help of a fork. Fry the other side too.
Put them in a tissue paper to drain the excess oil and continue the process till all batter is completed. You can also avoid coconut and sesame seeds for this preparation.
Ada
Ingredients:
Rice powder finely grinded - 1 cup
Salt - A little
Oil - 1 tablespoon
Jaggery grated - 1/2 cup
Coconut grated - 1.5 cups
Cardamom powder - 1/4 tsp
Water - 2 cups
Banana leaf - 6
Cashew nut broken into pieces - 5 or 6
Method of preparation:
Add oil and salt to water and boil it. Take it from the stove.
At once add rice powder and mix it well. When it cools make dough by hands and make 6 balls out of it.
Mix jaggery, coconut, cardamom and cashew nuts together.
Take each rice flour balls and spread it on the banana leaf like a chappathi and add a little jaggery-coconut mixture on the top. Then fold it well. Repeat the same process for other 5 balls.
Cook it using a steamer for half an hour. Your ada is ready to serve.
Sukhiyan
Ingredients:
Green gram - 1/2 kg
Jaggery - 1/4 kg
Coconut grated - 1/2 cup
Water - As needed
Cardamom powder - 1/4 tsp
Cumin seeds - 1/4 tsp
Maida - 1.5 cups
Gram flour - 1.5 cups
Oil - For frying
Method of preparation:
Add 3 cups of water to green gram and cook it. It should never be cooked too much. Drain full water.
Add 1/4 cup water to jaggery and melt it.
Add coconut to it and cook again till water is fully absorbed.
Add green gram to it and stir continuously. When water is fully absorbed, add cardamom powder and cumin seeds and put the flame off.
Mix maida and gram flour by adding sufficient water.
Make small balls of green gram-jaggery mixture. Dip it in maida-gram flour mixture and fry it till brown in hot oil.
Continue the process to make full sukhiyans.
