Banana - the fruit rich in natural sugars, potassium and fiber is found in wide varieties and everyone is fond of including it in daily diet. It has many health benefits including relief from stress and depression and if included in diet can decrease anemia considerably. Though everyone not look into the health benefits of this great fruit, but like to include it as a sweet or snack. Here I am providing you with 3 easy recipes of banana that can be considered as special Kerala dishes.
Nulliputt
It is a traditional dish of Wayanad and is very easy to make with minimum number of ingredients. Small banana like palayam kodan or rasakadali as given in the picture is best suited for making this snack item. Also the fruits used must be well ripened to get the exact taste. Here I am not giving you the accurate amount of each ingredient needed, just an estimation. Ingredients can be varied according to the taste.
Ingredients:
Banana - 1/2 kg
Sugar - 2 or 3 tsp
Turmeric powder - 1/4 tsp
Rice powder used for making steam cake - 1 handful (It can be varied)
Coconut oil - Needed for frying
Method of preparation:
1. Take a pan and dry fry the rice powder for 1 minute in low flame till colour of the flour slightly changes.
2. Take a container and crush the banana with hand or spoon.
3. Add turmeric powder and sugar. Mix well.
4. Add rice powder to it till the water of the mixture is absorbed. ie. Rice powder is added to reduce the moisture of mixture. Never add water. Always amount of banana should be greater than rice flour and it will taste best. Mix the contents well.
5. Heat coconut oil in a pan. Make small balls from the mixture by hand. Never press it. It so, it will be hard. Put the balls to the oil and fry both sides.
6. Continue the process till whole balls are made.
7. Always serve hot. Then only it tastes good.
Note: The flour used for Nulliputt is not finely grinded one. It is the typical rice flour used for making steam cake. Then only it will get good results.
Banana Fritters
Banana fritters are made with robusta by adding a little corn flour and coconut. It can be said to be a combination dish. Yet, it needs only minimum number of ingredients. Preparation time is also minimum. It is made by robusta, given in the picture.
Ingredients:
Robusta well ripened - 4
Corn flour - 4 tablespoon
Sugar - 5 tablespoon
Milk - 2 or 3 tablespoon
Cardamom powder - 1/4 to 1/2 tsp
Scrapped coconut - 1/4 cup
Oil - As needed
Method of preparation:
1. Take a container and crush the banana with hand or spoon.
2. Add sugar, corn flour powder, cardamom powder, milk and coconut. Mix the contents well. You can also add cashew nuts and raisins to bring some variation.
3. Heat oil in a kadai. Take a little batter in a spoon and pour it to the oil. Repeat it.
4. When one side is done (turns light brown), turn it to the other side and fry well.
5. Serve hot.
Banana pancake
Banana pancake is a variation of fritters. Those who want to avoid excess oil can make banana pancake with same batter.
Ingredients:
Robusta well ripened - 4
Corn flour - 4 tablespoon
Sugar - 5 tablespoon
Milk - 2 or 3 tablespoon
Cardamom powder - 1/4 to 1/2 tsp
Scrapped coconut - 1/4 cup
Ghee - Needed for shallow fry
Method of preparation:
1. Take a container and crush the banana with hand or spoon.
2. Add sugar, corn flour powder, cardamom powder, milk and coconut. Mix the contents well. You can also add cashew nuts and raisins to bring some variation.
3. Heat a pan. Add a little ghee on it. Take batter in a spoon and spread it on the ghee. Pour a little ghee on the top also. Medium flame is necessary.
4. When one side is done, flip it to the other side with a spatula. Take it from the pan when it is done.
5. It resembles a small dosa. Serve hot.
