Ingredients:
Finely chopped carrot-4cups
Fenugreek seeds – 10 to 15
White gram – 2spoons
Mustard seeds – 1 ½spoon
Dry chili – 8
Lime juice – 1 spoon
Turmeric – littlle
Finely chopped coriander – ½ cup
Salt – according to the taste
Oil – 2 spoons
Preparation:
Place a bowl on the stove.
Add a spoon of oil and heat it.
Then add fenugreek seeds, mustard seeds, and dry chilies and fry them.
After it gets cooled make that fried mixture in to powder through mixy.
Now take another bowl add carrot, turmeric powder, salt and the powder which we made just before.
Now add lime juice and coriander then mix it thoroughly.
Therefore carrot pickle is ready.
This can be eaten with the combination of rice, chapathi, phulka, bread. Carrot pickle is very tasty. The powder we prepare is the main cause for this dish to be taste. Every one shows interest to have it. This is very good for health as carrot and coriander are the main ingredients which have more vitamins.
