With onset of the summer season, most of us have started longing for that huge pitcher of nice chilled beer!!! Along with that huge beer, the usual chakhana of fried potato crisps, fried peanuts and masala cashews is a must have. This results in the added calories and there goes the resolution to lose some weight this summer; yet again!!
Don't lose heart yet! You try this yummy recipe which though delicious, is actually healthy.
Ingredients:
250 g thick curds
Assorted fresh veggies such as firm carrots, green, red and yellow bell peppers,
Onion, and Green chillies - all veggies washed, wiped dry and cut into thin wedges lengthwise Chinese style.
Herbs - fresh green coriander and mint leaves - washed and chopped finely.
Black pepper powder.
Oregano (optional)
Rock Salt to taste.
Method:
Hang the curds in double layer of clean muslin cloth for a couple of hours so that excess water is drained away and the curds are quite firm.
Next add all the veggies, herbs and spices. Add rock salt as per taste.
Mix all the ingredients well. Place into a beautiful serving bowl and place into refrigerator to cool for at least half an hour.
Spread this dip on Cracker biscuits or on Monaco biscuits and serve with beer. Alternatively this can be spread onto bread and eaten as a sandwich.
For all those who are enviously thin and do not have to care much about calories, this dip can be had as an accompaniment with wafers, Bingo mad angles etc.
The limit is endless. You can be as creative as you can be!! Also, a bit of olive oil can be added for that extra zing.
