Various things that one needs to keep in mind while learning a new recipe
- Intensity of the flame. The dish taste and color varies based on how long it is kept to cook under various intensities like Sim, High. So try out various options E.g. The best Biryani’s are made by putting the utensil in low flame for hour’s.
- Water Quantity: Amount of water to be added and the stages during which it needs to be added
- Oil content. High usage of oil may not always give better tasted. Besides less amount will give a good health
- Exposure: Closing the utensil with a lid helps not only in saving gas but also changes the taste of the food. Also whether a cooker is used or an open vessel.
- Type: The utensil in which the dish is cooked depending upon the type like Copper, steel, aluminum etc.
- Soaking: Some ingredients like channa, Rajma need to be soaked prior to cooking. Note the time required for each.
- Quantity: The amount of dish that needs to be prepared may change the taste if not proportioned accordingly. Some dishes just cannot be prepared for a single serving and some cannot be prepared for a mass gathering.
- Paste and Spices: The taste of the paste varies on whether it is grated, grinded, blended (using mixer) and when the spices are added in.
- Cutting: The shape and size in which the vegetables are cut need to be kept in mind. E.g. Chopped onions or grated onions change the taste of the dish.
- Garnishing: Finally the Presentation of the dish needs to be visually appealing
