Ingredients of Lucknow biryani:
Mutton - 1kg
Basmathi rice - 1 Kg (finely washed and soaked in water)
Ghee - 200g
Ginger Garlic - 50g
Onions -2
Curd - 100g
Chili powder - 1 tea spoon
Lemon juice - 1
Milk - 200ml
Saffron / Kumkuma puvvu - 1 pinch
Rose water - 2 table spoons
Mogli flower petal water - 2 tablespoons
Ingredients for masala:
Green Elachi - 10
black Elachi - 5
Cloves - 2
Cinnamon / Dalchina chekka - 3 inch piece
Biryani leaves - 3
Preparation of masala: Mix all these ingredients and make into powder.
Ingredients for biryani masala:
Elachi - 5
Net mug powder / Jaji kai powder - 1 Pinch
Pepper - 15
Somp / soup zeera - 1/2 tea spoon
Preparation of masala: Mix all these ingredients and make into powder.
Preparation of Lucknow Biryani :
1. Place a thick bowl on the stove.
2. Then add ghee in it and then add chopped onions in it.
3. Let them fry until the onions change to red color.
4. Then mix ginger garlic in it.
5. Now add masala in it.
6. Then add thoroughly washed mutton pieces in it and let them cook for 15 minutes on less flame.
7. Now open the lid and let it cook for sometime.
8. Then add chili powder, curd and mix them finely.
9. Let them cook for some time
10. Then add water in it according to the requirement.
11. Let the mutton pieces get cook completely.
12. Then mix biryani masala powder in it.
13. Now add lemon juice in it and mix them finely.
14. Now add water in a bowl and place it on the stove.
15. Then add 2 elachi's, 4 cloves, salt in it and mix them finely.
16. Then add basmati rice for 3/4 th of the bowl.
17. after the rice get boil completely then spread this rice on the mutton pieces where we have cooked them.
18. Then sprinkle saffron, water and milk on the rice.
19. Then spread remaining rice in the rice again and close the bowl with the lid
20. Let it cook for 15 minutes.
21. Then off the flame.
22. Open the lid only after 10minutes.
23. Thereforem Lucknow Biryani is ready.
