Easter is a festival of celebration. People all over the world celebrate Easter. Here, I am giving you two rich dishes for making your Easter special. Both are non-vegetarian dishes and can be made at any special occasion, not only Easter.
Grilled fish for Easter celebration
Ingredients:
Fish - 3/4 kg
Lemon juice - 1/4 cup
Olive oil - 1/4 cup
Chilli powder - 3/4 tsp
Light soya sauce - 2 big spoons
Crushed ginger - 2 big spoons
Garlic crushed - 6 cloves
Spring onion finely chopped - 3
Pepper powder - 1/2 tsp
Method of preparation:
Cut fish into pieces.
Mix all contents together and marinate the fish with it.
Spread the marinated fish in a container and pour the remaining mixture on the top of it. Keep it in fridge for 4-5 hours.
Preheat oven to 350 degree Fahrenheit.
Spread a little oil on the dish and place the fish on it. Avoid the watery gravy while placing the fish. Then place it in oven and close the door.
After 5 minutes, take the fish out and pour a little gravy on the top. Flip them all and place it in oven for grilling again.
Fish should not be dry. So, at regular intervals add a little gravy to it.
Spread the grilled fish in a serving plate. Decorate it with parsley and lemon and serve it along with marmalade sauce.
How to prepare marmalade sauce?
Ingredients:
Gravy left after marinating the fish - 1 cup
Marmalade - 2 big spoons
Stock - 1 cup
Fish sauce - 1 big spoon
Maida - 1 or 2 big spoon
Spring onion chopped - 1
Olive oil - 1 big spoon
Pepper powder - As needed
Method of preparation:
Mix marmalade and stock very well.
Mix maida and fish sauce also.
Heat olive oil and add spring onion to it. When it is done, add the above two mixtures to it.
When the gravy thickens, put the flame off and add salt and pepper.
Mint Chicken - Easter served
Ingredients:
Chicken as whole with skin - 1
Mint leaves paste - 3 small spoons
Cinnamon powder - 1 tsp
Cardamom powder - 1/2 tsp
Pepper powder - 1 tsp
Balsamic vinegar - 1.5 big spoons
Salt - As needed
Olive oil - 2 table spoon
Method of preparation:
Clean chicken as a whole and remove its moisture completely using a dry cloth or anything.
Mix all ingredients together except olive oil and dried chicken.
Then add olive oil to it and mix well with fingers.
Marinate the chicken well with this mixture.
Pull back the skin from neck and tie it with legs. Place both the wings backwards. Then refrigerate it for one full night.
Preheat oven 350 degree Fahrenheit.
Take a roaster pan and place the marinated chicken with chest pointing upwards. Roast the chicken for 1 and half hours, placed open inside the oven.
Just before cutting it, cover it with a foil.
Decorate it with mint leaves and serve it with mint sauce.
How to prepare mint sauce?
Ingredients:
Mint leaves - 1/4 cup
Vinegar - 1/4 cup
Sugar made into powder - 1 big spoon
Method of preparation:
Dissolve sugar in vinegar and spread mint leaves over the top. Refrigerate it for one day.
If vinegar is excess sour, increase the amount of sugar a little more and just boil it by adding a little water. Then refrigerate it.
