Jackfruit is the largest tree borne fruit in the world. Here are some mouthwatering recipes for jackfruit lovers.
- Jackfruit Dosa :
Ingredients : Jackfruit flesh or pulp (Seed removed) – 1 kg
Rice – ½ kg
Grated coconut : 1 cup
Jaggery ghee for taste
Salt for taste
Method :
Soak rice in water for about 2 – 3 hours. Then grind jackfruit flesh with grated coconut and soaked rice in a mixer. Batter should be thick. If you want sweeter dosa then you can add jaggery to the batter. Heat the tava and apply one tablespoon of ghee equally on the tava. Pour a spoonful of batter at the center of tava and spread it with the back of the spoon to a thin round. Cook other side of dosa as well.
You can eat this dosa with ghee or with chutneys also.
2. Jackfruit halwa:
Ingredients : Jackfruit flesh (Seed removed) – 20
Jaggery – 2 -3 cups
Ghee – 2 spoons
Cardamom powder – ½ teaspoon
Cashew nuts
Method:
Cut jackfruit flesh into small pieces and boil it. When it becomes soft, remove extra water from it. Now grind this in mixer without adding water and keep aside. Now take 2-3 cups of jaggery in the pan or in the vessel and heat it. If it is liquid jaggery then you can heat it directly or if it is solid jaggery then you have to melt it adding water, before heating it. When jaggery starts boiling, add grinded pulp and stir it. You have to stir it continuously till this solution leaves the side of the pan or vessel. When it starts leaving the side of the pan add ghee and stir it for 5 minutes. Add cardamom powder and cashew nuts.
You can eat this directly or when it becomes thick, you can cut into pieces and eat it.
3. Jackfruit Kheer (Payasam) :
Ingredients: Jackfruit flesh (Seed removed) – 15
Basmati Rice – ½ cup
Poppy seeds (Gasagase) – 2 teaspoons
Grated coconut – 3 teaspoons
Jaggery – ½ cup
Ghee – 1 teaspoon
Cardamom powder – 1 teaspoon
Cashew nuts
Dry grapes
Method:
Fry poppy seeds and basmati rice for 10 minutes and put in mixi. Add grated coconut, jaggery, and water and grind it. Boil jackfruit flesh and when it becomes soft add grinded ingredients and boil it further. When this solution becomes little thick add cardamom powder, cashew nuts, ghee, dry grapes and mix it well.
4. Jackfruit Chips
Ingredients : Raw but completely grown jackfruit flesh – 50
Oil – ½ litre
Red Chilli powder – 1 small cup
Salt for taste
Method:
Take raw but firm jackfruit flesh and cut into long pieces. Jackfruit should be completely grown and fresh. Mix salt and Red chilli powder in water. Heat oil and deep fry jackfruit pieces in it. When it is almost fried, pour 1-2 spoon of salt and chilli powder solution in it and fry till completely done (till it turns to golden brown color). Crispy crispy chips are ready to eat.
Note : If you don’t want spicy chips, you can add only salt water to it and don’t add red chilli powder to it.
After taking out, when the pieces are still hot, a teaspoon of chili powder can be sprinkled on it, for extra taste.
5. Jackfruit Sweet Idli
Ingredients : Jackfruit flesh – 3 cups
Idli Rava or Rice sooji – 1-2 cups
Jaggery – 1 cup
Grated coconut – 1 cup
Salt for taste
Cashew nuts
Method :
Grind jackfruit flesh, jaggery and grated coconut in the mixer without adding water. Transfer this grinded solution to a vessel and add idli rava or sooji rice, cashew nuts to it and mix well. Fill this idli mix into idli moulds (Idli cooker). Before filling, apply pure ghee to idli moulds. Steam it for about 20 minutes. You can have it with pure ghee or with any spicy chutney.
6. Raw ( Tender) jackfruit palya (Gujje Palya or Kadige Palya) :
This is one of tastiest playas I ever had. Mainly prepared in South India.
Ingredients : One small raw and tender jackfruit
Onion – 1
Green Chillies – 2
Grated coconut – 1 Cup
Jaggery – 1 teaspoon
Salt for taste
Chana Dal – 3 teaspoons
Urad dal – 3 teaspoons
Curry leaves
Tamarind juice – 2 teaspoons
Mustard seeds – 1 teaspoon
Hing – a pinch
Oil – 2 table spoons
Method :
Peel off the tender jackfruit’s skin and remove the center portion of it. And then cut the jackfruit into small pieces and cook them for about 10-15 minutes and allow them to cool. Cut the onion and green chillies into small pieces. Now heat oil in a pan and add mustard seeds, chana dal, urad dal, curry leaves, hing, onion and green chilly pieces and fry it for 5 minutes. Then add cooked jackfruit pieces, salt for taste and mix it well. Then add grated coconut on it. If you want spicier palya, then you can add garam masala powder before adding cooked jackfruit pieces. This is very tasty with meal.
Uses of Jackfruit Seeds :
We can prepare delicious items like sambar, pudding etc from jackfruit seeds.
Cooked jackfruit seeds are also very tasty to it. Just allow seeds to get dry for a week and then remove white color skin. Simply pressure cook these seeds with a pinch off salt and eat it. It is very delicious.
