Hi friends in this article we will see about Mushroom soup making. Eating mushrooms is good for health as it contains essential nutrients. Mushrooms are a great source of phosphorus, magnesium, potassium and selenium, nutrients often lacking in our highly processed-food diets. In addition, mushrooms contain virtually no fat or cholesterol. Naturally low in sodium, mushrooms are also a good source of fiber.
Ingredients:
200 gms fresh mushrooms
2 medium sized onions
300 mls milk
2 bay leaves
5-6 peppercorns
4 cloves
2 tblspns butter
1 tblspn refined flour (maida)
¾ cup fresh cream
Salt to taste
½ tspn white pepper powder
A pinch nutmeg powder
Directions to cook:
step1 First clean and wash the mushrooms. Slice four to five pieces.
step2 Now chop the remaining mushrooms and onions.
step3 Boil milk alongwith bay leaves, peppercorns and cloves. Strain and keep the milk.
step4 In a pan melt the butter. Add chopped onions and chopped mushrooms and cook till they are soft.
step5 Add the flour and sauté till there is no raw flavour coming from flour, taking care that the flour does not get burnt.
step6 Pour the milk slowly and stir continuously to avoid lumps from forming.
step7 Now allow to cook for about five minutes. Puree the mixture when a little cold.
step8 The soup should have a smooth texture. Bring it to a boil, correct the consistency by adding more milk if required.
step9 Add the cream (reserving a little for garnish), salt, pepper powder and nutmeg powder.
step10 Stir well, serve hot, garnished with mushroom slices and cream.
