Sorry sandhya i dont know about this.This is a nice question.
Isn't it really funny to ask such a question? :)
Let us see, if some one has got a correct answer.
To make it yummy they will add some colour to it.This is my guess.
Its really surprising to know that Vanila extract is black but icecream we eat is of white color. I guess because of Cream added to vanila extract,that makes the icecream white.
If we have ice creams, chocolate, strawberry, butterscotch etc, it will have the same colour as that of its extracts. Then why, Vanilla ice cream white colour?

Vanilla Extract is only for flavor.As i have searched and from there i got that a Good Vanilla icecrean is not complete white a tint of yellow shades are there on it.
Vanilla extract is brown in color. We use Vanilla extract only for flavor.
So,yes,this is the reason,why Though,Vanilla extract is brown,but,vanilla ice cream is White.

Sandhya,atleast give comment on what i have said at last. May be that would be the reason.

Sandhya, as i told that Vanilla extract is been mixed only for flavor,so when something is mixed less,we just get a tint of shades.
So,that's why Ice cream has light brown shades.

Why such ice creams have good colour, if only respective essence is only added?

I don't know the answer. It's a truth. I just imagined such a question. That's all. I don't have any answer in hand :)
Yes,i am correct. The reason i have given is the only truth behind that white of Ice cream.
well because the amount of cream and milk is in large proportion to the extract to turn the ice cream into brown.......

But again my question arise. Why, it is not happening in other flavours of ice cream?
The reason why vanilla gives light color to the foods is because of amounts of extract actually used. Since natural vanilla is too expensive, right after Saffron, and it gives a strong flavour, it is used in very small quantities and hence does not cause any significant color change in the foods it has been used in.
