Actually using ajinomoto beyond a certain point may cause harm but if used in really less quantity it would not be harmful. while cooking Chinese you can avoid it so it is not necessary to use it .basically with help of ajinomoto veggies would cook faster and that is why Chinese use it because noodles don't take time to cook plus they are already boiled and used when cooking Chinese dish.
