It is Sanskrit word. The word 'Meenakshi' is a combination of two words 'Meen' and 'Akshi'

Meenaskshi = Meen+Akshi

Grammatically it is an example of Sandhi(Combination) in Sanskrit.

Meen = Fish
Askhi = Eyes

Meaning :
Person who is having eyes as Fishes. As we know fishes are having very beautiful shape.
