As its summer season and also the season of mango (Aam), the king of fruits. Almost everyone loves to eat mango and eatables made by it. Now let’s learn some easy and mouth-watering recipes of mango. Here we go-
Aamras:
Aamras is a very sweet and tasty recipe. It doesn’t take even much time and is easy to prepare.
Ingredients:
- Mango flesh(cubed)- 4 cup
- Milk- 2 cup
- Water- 1 cup
- Sugar- 5 to 6 tablespoon
- Saffron Strands- ¼ tablespoon
Preparation:
- Heat the milk till it comes near to boiling in a microwave or stove.
- Crush the saffron strands, and add it to the milk and let it for around 15 minutes.
- Make the puree of mango flesh, water, milk and sugar by the help of blender.
- Add saffron milk to it.
- The Aamras is prepared to serve for 2.
Aam Ka Panna:
Aam ka Panna is a tasty sharbat made by raw mangoes.
Ingredients:
- Mango (raw)- 2
- Sugar- ¼ cup
- Cumin powder- 2tablespoon
- Asafoetida- ¼ tablespoon
- Peppercorns (crushed)- 1 tablespoon
- Black salt (for taste)
Preparation:
- Take the mangoes and boil them in pressure cooker.
- Let them cool down.
- Now peel the mangoes and then mash the pulp in a bowl.
- Now put sugar, cumin powder, asafoetida, crushed peppercorns and black salt in it and mix it well till the sugar get dissolve completely.
- Now divide the mixture into 3 to 4 servings and add chilled water in it and stir.
- Now the sharbat is ready to serve.
Shahi Aam ki chutney:
Shahi aam ki chutney is a sweet and tasty chatni and often served in weddings also.
Ingredients:
- Mangoes (raw)- 5
- Oil- 2 ½ tablespoon
- Sugar- 1cup
- Panch phoran (Jeera, Saunf, methi, Rai, kalonji)- 2 ½ tablespoon
- Water (warm)- 2 cup
- Red chillies- 2
- Salt (for taste)
- Dry fruits (cashew nut-4, almond-4, chironji-8 to 10)
Preparation:
- Take all the mangoes and peel them and then cut them into thick slices.
- Take a pan and heat the oil in it.
- Add panch phoran and red chillies in the oil and stir till it crackles.
- Now add the mango slices to it and heat for a minute.
- Now take 2 cups of warm water and add to mango slices and add sugar to it.
- Cook it on low or medium heat till the sugar melts and the mixture becomes thick.
- Add salt according to taste and mix well.
- Now take dry fruits and cut them into pieces and add to the chutney.
- Remove the chutney from heat.
- Now in another pan, roast the remaining panch phoran dry and grind it into powder.
- Now add this powder on top and serve.
Aam ki Lassi:
Aam ki Lassi is a tasty and refreshing drink for summers.
Ingredients:
- Mango- 1
- Yogurt- 1 cup
- Sugar- 1 tablespoon
- Saffron- 3 to 4 strands
- Ice-cubes
- Green cardamom powder
Preparation:
- Take the mango and peel it and then cut it into slices.
- Now grind the slices into blender and make a paste of it.
- Take the paste out of blender and then take yogurt, sugar and ice-cubes and put them in blender and blend properly.
- Now take the mango paste and add it in the same blender and blend it for a minute.
- Now take the whole mixture out and garnish it with saffron strands and cardamom powder and serve chilled.
Aam ka Jam:
Aam ka Jam is a sweet jam which can be taken with bread, chapattis or any food item.
Ingredients:
- Mangoes (raw)- 4
- Sugar- (same as per the quantity of mango, if ½ kg mango then ½ kg sugar)
- Water
- Elaichi powder
Preparation:
- Take the mangoes and peel them now grind them.
- Now put the mangoes into a pan and add sugar to it and also add water and start heating on medium or low heat.
- When the mixture becomes thick, remove it from the heat and cool it.
- After cooling it again put it on heat for sometime on low heat.
- Then remove it from heat and add elaichi powder to it and let it cool down.
- Now you can serve it and can also preserve for days.
