Jack fruit is really a nutritious fruit, yet no one know its true value. It holds the record of largest fruit in a tree. Not only for its size, but also for its taste and nutritional factors, it is not far behind any other fruits, though it is cheap. Its fruit is not only rich in magnesium and vitamin C but also contains fat and cholesterol only in low levels. Its seed is an abundant treasure of vitamin A, C and B complexes, calcium, zinc and phosperous. Here I am giving you 5 recipes that can be made either from its fruit or its seed.
Jackfruit Chips
Unripe jack fruitlets are used for making chips.
Ingredients:
Jack fruitlets sliced (excluding its seeds) horizontally - 2 cups(should not be too thick or too thin)
Turmeric powder - 1/4 tsp ( or as per needed)
Salt - As needed
Asafoetida (optional) - A pinch
Oil - for frying
Method of preparation:
1. Mix the fruitlets with salt, turmeric powder and asafoetida and keep it aside for some time.
2. Deep fry it in hot oil and serve hot.
Jack fruit Baji
Jack fruit used for making baji should be hard flesh, commonly known as 'varikka' in south Indian languages.
Ingredients:
Varikka jack fruitlets cut into 4 pieces (excluding its seeds) - 1 cup
Gram flour - 1/2 cup
Maida - 1/2 cup
Salt and asafoetida - As needed
Oil - For frying
Method of preparation:
1. Prepare the batter by mixing gram flour, maida, salt and asafoetida.
2. Heat oil in a frying pan.
3. Dip each fruitlet piece in the batter and fry it in hot oil.
Jack seed Payasam
Ingredients:
Jack seed - 1/4 kg
Jaggery - 400 gm
Coconut - 2
Ghee - 1 1/2 table spoon
Cashew nuts, raisins - 50 gm
Cardamom powder - 1/2 tsp
Method of preparation:
1. Remove the skin of jack seeds and cook it well. Then grind it and keep aside.
2. Heat jaggery to make it a solution. Stir well. Add jack seed paste to it and stir continuously for 5-10 minutes.
3. Make 1 cup first milk, 2 cups second milk and 2 cups third milk from scrapped coconut.
4. First add the third milk to you payasam and stir continuously. When it is almost absorbed, add second milk to it.
5. When it becomes almost thick, add first milk and cardamom powder. No need to boil it. Take it from flame just before it starts boiling.
6. Heat ghee in a pan and fry both cashew nuts and raisins and add it to your payasam.
Jack seed Avalose
Ingredients:
Jack seed - 1 cup
Scrapped coconut - 1
Jaggery - 100 grams
Method of preparation:
1. Fry the seeds (without oil) in a kadai and powder it, after removing its skin.
2. Add scrapped coconut and jaggery to it and mix well and serve.
3. If you want to make its balls, then heat jaggery. Add coconut and jack seed powder to it and make small balls before it becomes cold.
Jack fruit Bonda
Ingredients:
Unripe jack fruit cut into small pieces - 1 cup
Maida - 1/4 cup
Gram flour - 1/2 cup
Asafoetida - 1 pinch
Curry leaves - A little
Green chillies chopped - 3
Salt - As needed
Oil - As needed
Ginger cut into small pieces - 1 piece
Method of preparation:
1. Steam and cook jack fruitlets and add all ingredients to it except oil.
2. Mix the contents well and it should be have the moisture of the flour prepared for making chappathi.
3. Make lemon sized balls from them and fry them golden brown in hot oil.
Jack fruit Avial
Unripe jack fruit along with its seeds is used for preparing avial. It should never have the sweetness.
Ingredients:
Unrippened jack fruitlets cut into small pieces (vertically) - 2 cups
Jack seeds cut into small pieces - 1/2 cup
Coconut scrapped - 1 cup
Chilli powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Green chillies split into two - 2
Garlic - 3 or 4 cloves
Shallots - 3 or 4
Cumin seeds - 1/4 tsp
Curry leaves - A little
Salt - as needed
Red chillies as whole - 2 for garnishing
Method of preparation
1. Cook jack seeds and fruitlets by adding a little water, green chillies, turmeric powder and salt in an earthen pot.
2. Keep a handful of scrapped coconut aside and grind the rest along with chilli powder, cumin seeds, shallots and garlic.
3. Add this mixture to the cooked jack fruit and stir well. Add a little curry leaves too. When it boils, put the flame off.
4. Heat oil in a pan and add red chillies to it. When it turns brown colour, add scrapped coconut to it and fry it till brown. Add a little curry leaves to it.
5. Add this hot oil to your avial and mix well. Your avial is ready to serve.
Jack fruit Ada
Ingredients:
Jack fruit sliced - 1 cup
Raw rice soaked - 1 cup
Jaggery - 4 pieces
Salt - As needed (a little)
Banana leaf - 1 or 2
Method of preparation:
1. Grind well jack fruit and rice. Add jaggery solution and a little salt to it.
2. Mix it well and it should never be watery.
3. Steam the banana leaf by placing it on the top of the gas flame to make it soft. Otherwise it will break.
4. Spread the mixture evenly on the banana leaf and fold it. You can tie it with a thread so that it won't open.
5. Cook it using a steamer.
